INGREDIENTS :
. 1 cup quinoa ( rinsed and drained )
. 2 cups water or vegetable broth
. 2 boneless, skinless chicken breasts
. 1 tablespoon olive oil
. 1 tablespoon cumin powder
. 1/2 tablespoon paprika
. Salt and pepper to taste
. 1 cup cherry tomatoes ( halve)
. 1 cucumber ( diced )
. 1/2 red onion (thinly sliced )
. 1/4 cup fresh parsley ( chopped )
. 1/4 cup crumbled feta cheese ( optional )
. 2 tablespoon lemon juice
. 1 tablespoon olive oil ( for dressing )
. Salt and pepper to taste
INSTRUSTIONS:
1 . Cook the Quinoa :
In a medium saucepan , bring quinoa and water to a boil. Reduce heat, cover and simmer for 15 minutes or until fluffy . Let it cool .
2 . Grill the Chicken :
Marinate chicken with olive oil, cumin , paprika , salt, and pepper . Grill for 6-7 minutes per side until fully cooked. Slice into strips .
3 . Prepare the Salad :
In a large bowl , mix cooked quinoa, cherry tomatoes , cucumber , red onion , and parsley. Top with grilled chicken .
4 . Dress it Up :
Whisk lemon juice , olive oil , salt, and pepper . Drizzle over the salad and toss gently . Add feta cheese if you like!
5 . Serve and Enjoy :
Garnish with extra parsley and a squeeze of lemon . Serve chilled or at room temperature.
